In the vineyard

Prosecco Brut Bosco del Merlo is produced from Glera grapes, grapes grown in the most typical area.where the favorable microclimate and the terroir are perfect for the cultivation of the grapes. Special practices such as the clonal selection and the multiple harvests , are used to obtain different crus that will then be selected for the production of Prosecco. The grape harvest takes place at night, during the second decade of September.

In the cellar

Vinification in white, soft pressing of the grapes, to extract only the best must. After the static decanting follows the fermentation in purity at controlled temperature, for approximately 10 days at 14/16°C. Then wine refines on yeasts for 3 months. Taking froth and refermentation in steel tanks for about 40-50 days at 13°/ 14°C with the preservation of the noble bubbles, give a delicate and creamy parlage, fine and persistent, amplifying all the perfumes of this elegant prosecco.

In tasting

Pale yellow wine with green reflexes. Brilliant foam and thin grain.Perlage is extremely fine, noble and persistent. It has delicate perfumes, reminiscent of fragrant fruity notes, such as pear and green apple; you can also distinguish
notes of balsamic and mint. All this combines a floral bouquet with scents of acacia, rose and white flowers. At palate it’s slightly aromatic and, surprising the minerality that gives freshness to a unique product, with a slight amiability.

This Prosecco is produced exclusively with the best grapes of the year declared on the label. The winery guarantees the quality of the product from the vineyard to the glass.
